What you will need:
- 1 and a half cups of strawberries
- 2 tablespoons of sugar
- 2 tablespoons of water
- 1 cup of boiling water
- 1/2 cup of sugar
- 1 cup of freshly squeezed lemon juice (*if you're using concentrated lemon juice like me, you will only need half a cup of this!)
- 4 cups of sparkling water
Hints and tips!
1. Ensure you use the same cup when measuring out each ingredient to create an equal measurement this applies to the strawberries, sugar, boiling water etc...
2. Slice the 'leafy' tops off the strawberries, nobody wants a drink full of leaves right?! You may also wish to remove the seeds but this does not particularly matter.
3. If you don't fancy sipping on some strawberry seeds, ensure to drain out your blended strawberry mixture into a sieve to separate the seeds from the mixture.
How to make:
1. Add the strawberries, 2 tablespoons of sugar and 2 tablespoons of cold water into a blender and blend together until you are left with a purée like mixture.
2. In a separate bowl, add a cup of boiling of water and half a cup of sugar and stir together until the sugar has dissolved.
3. Once the sugar has dissolved, add the cup (or half a cup*) of lemon juice and then the strawberry mixture and blend together.
4. Finally, add 4 cups of sparkling water and mix together for the last time until the mixture is 'well combined'.
